Warm Breakfast Prune Cake
- 1 cup water
- 1 egg
- 1/2 cup butter
- 1 teaspoon vanilla
- 1 cup moist pack prunes, chopped
- 1 1/2 cup flour
- 1 teaspoon baking powder
- 1 teaspoon soda
- 1 cup sugar
- 3/4 cup chopped nuts
- Boil water; break butter into small pieces and add to the water. Stir until melted off the heat.
- Add the prunes, baking powder, sugar, egg and vanilla. Beat until smooth. Add the flour, baking soda and walnuts. Stir until blended and turn into a greased 9x9x2 baking pan.
- Bake at 350° 30 to 35 minutes or just until the cake begins to pull from the sides of the pan. Cut into small squares and serve warm.
