Sweet Potato Casserole
- 3 cups sweet potatoes (about 4 big ones)
- 1/2 cup sugar
- 1/2 cup butter
- 2 eggs, beaten
- 1/2 teaspoon vanilla
- 1/3 cup milk
- 1/3 cup melted butter
- 1 cup brown sugar
- 1/2 cup flour
- 1 cup chopped pecans
- Boil & mash potatoes. Mix in sugar, butter, eggs, vanilla and milk. Put in a 13"x9"x2" baking dish.
- For topping: Melt butter and mix in sugar, flour and pecans. Sprinkle over potatoes and bake 25 minutes at 350°.
Serves 10-12.
