Cuisinart High-Loft White Bread
- 1 package yeast
- 4-1/2 cups flour
- 1-1/4 cups hot water
- 3 tablespoons butter
- 1-1/2 Tbsp sugar
- 1-1/2 tsp salt
- 1 egg
(Requires Cuisinart or comparable food processor)
- Insert metal blade. Add yeast and one and one half cups of the flour. With the motor running, pour the hot water through feed tube. Process 15 seconds. Scrape work bowl and process 15 seconds more. Scrape work bowl, replace cover and let stand for 15 minutes.
- Add butter, sugar, salt and egg. Process until blended, about 15 seconds. Transfer this batter to large measuring cup. Remove the metal blade and insert the plastic dough blade. Add remaining flour to work bowl.
- With motor running, pour mixture slowly through feed tube, about 20 seconds. Process one minute; let stand 1 minute. Process again until dough is elastic, but still moist and sticky, about 90 seconds. Transfer dough to gallon-sized plastic bag that's been floured inside. Squueze out air and twist-tie the topmost part of bag. Let rise in a warm place until doubled, 45-60 minutes.
- Remove dough from bag and punch down; shape into loaf form. Place in a greased and floured loaf pan and cover with oiled plastic wrap. Let rise until doubled, 30 - 40 minutes. Preheat oven to 375°. Bake until golden brown and loaf sound hollow when tapped, 30-35 minutes. Remove from pan and bake directly on rack for three minutes to crisp bottom of loaf. Let cool on wire rack for two hours (at least) before slicing.
