Cornmeal Pancakes
- 1 cup yellow cornmeal
- 1/2 teaspoon salt
- 2 tablespoons honey
- 1 cup boiling water
- 1 egg
- 1/2 cup milk
- 2 tablespoons melted butter
- 1/2 cup flour
- 2 teaspoons baking powder
- Stir together the cornmeal, salt and honey in a large bowl; stir in boiling water and cover. Let sit for 10 minutes.
- Beat egg, milk and melted butter together. Add to softened cornmeal and mix well.
- Sift together flour and baking powder, then add them to the batter. Cook cakes on a hot greased griddle at 400° until bubble until edges appear dry. Flip and cook until done. Serve with warm syrup or honey.
