Cornmeal Pancakes
  1. Stir together the cornmeal, salt and honey in a large bowl; stir in boiling water and cover. Let sit for 10 minutes.
  2. Beat egg, milk and melted butter together. Add to softened cornmeal and mix well.
  3. Sift together flour and baking powder, then add them to the batter. Cook cakes on a hot greased griddle at 400° until bubble until edges appear dry. Flip and cook until done. Serve with warm syrup or honey.
