Pineapple Upside-Down Cake
  1. Drain pineapple, reserving syrup. Halve the slices. Melt the butter in an 8"x8"x2" pan. Add the brown sugar and 1 tablespoon of the reserved syrup.
  2. Add enough water to remaining syrup to make 1/2 cup of liquid. Arrange the pineapple slices in the bottom of the pan. Place a cherry half in the center of each slice.
  3. Cream together shortening and sugar until light. Add egg and vanilla; beat until light and fluffy.
  4. Sift together dry ingredients; add to sugar/butter mixture alternately with the 1/2 cup of syrup liquid, beginning and ending with syrup, and beating well after each addition.
  5. Spread batter over pineapple; bake in a 350f oven for 40 to 45 minutes. Cool five minutes, invert on serving plate. Serve warm with whipped cream.
