Mince and Vegetable Pie
In New Zealand, ground beef is called mince. This recipe comes from an old NZ cookbook called 101 Ways With Mince. No mincemeat comes near this dish.
- 1 pound hamburger
- 1 onion, diced
- 1 carrot, diced
- 1 rib celery, diced
- 1/4 head red cabbage, finely shredded
- Salt, pepper and herbs
- 3/4 cup beef stock
- 2 teaspoons corn starch
- 2 tablespoons Worcerstershire
- 1 cup cooked rice
- Savory pie dough
- Brown ground beef and onion in a skillet until meat is browned and onion is softened. Add carrot, celery and cabbage. Cook over medium heat 5 minutes, or until cooked. Add stock and bring to a boil.
- Mix cornstarch with 2 tablespoons cold water. Remove from heat and stir in cornstarch and water. Add beef, rice and worcestershire. Season to taste and pour in a thick pie crust. Cover with more crust and bake until browned.
